  • Tip 3. Order Matters

    Tip #3: Order Matters

Make sure all dry ingredients are mixed thoroughly before adding in your wet ingredients, always adding wet to dry. Another tip? Glass and metal mixing bowls can do double duty as makeshift double boilers, too.

Tip #4: Butter is Your Friend

  • Tip 5. Freshness Matters

    Tip #5: Freshness Matters

Using fresh ingredients is key. Many ingredients used in baked goods like baking soda, baking powder, yeast and flour have a relatively short shelf life. It’s best to buy ingredients in small quantities to ensure the most delicious treats. A quick trick? Add boiling water to a small quantity of baking soda—if it bubbles, it’s still fresh.

Rely on a strong foundation of essentials: cake & Bundt pans, cupcake & muffin pans, baking & cookie sheets and more!

  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 2 teaspoons vanilla extract
  • 1/2 cup unsalted butter, room temperature

CLASSIC WHITE CAKE
Yields: Two 8-Inch Rounds

Instructions
1. Preheat oven to 325°F.
2. Butter or oil baking pan, and line the bottom of the pan with parchment paper. Butter paper and dust baking pan with flour, tapping out any excess. Set aside.
3. Sift together flour, baking powder, baking soda and salt into a medium bowl, and set aside.
4. Combine buttermilk and vanilla in another bowl, and set aside.
5. Beat butter, oil and sugar with an electric mixer using the paddle attachment and cream until pale and puffy, about 3 minutes.
6. Reduce speed and add egg whites, one at a time. Scrape down mixer bowl between each addition. Add egg yolk and mix until combined.
7. Reduce speed to low. Add dry ingredients in three batches, alternating with the buttermilk mixture. Be careful not to over mix the batter.
8. Pour batter into prepared pan and smooth top with a spatula.
9. Bake at 325°F for about 30-40 minutes, or until a toothpick inserted near the center comes out clean, and the cake springs back when pressed lightly in the center.
