The conical sides are angled out to provide more surface area for evaporation, while the walls retain more heat resulting in faster cooking times. All Viking contemporary cookware combines a layer of aluminum sandwiched between heavy-gauge stainless steel. No luck with this pan

I wanted this to be my new favorite pan. I’m a culinary school graduate and have cooked in some amazing kitchens and beautiful places. I have tried and tried again to love this pan. Unfortunately, I hate it. It discolors , burns and sticks. I have tried and tried again to use it. After the last of my farm eggs got ruined this am, I walked outside in 5 degree weather to toss the pan in the trash.
