My favorite fry pan
I love this pan. It responds to heat much better than any of my high-end stainless steel fry pans. I can bring it to the proper temperature much faster than any stainless steel pan which means I get dinner on the table faster. I can put a sear on a steak any chef would be proud to claim without resorting to the oven. This pan will develop a darker patina with use over time. A pan I purchased a couple of years ago is now a beautiful shade of black that contrasts nicely with the silver handle. This pan probably has the most comfortable handle of any carbon steel pan on the market. Be sure to read and follow the care and maintenance instructions and you will be fine.
Great pan - discolored immediately
Love this pan - the size is measured at the top of the sides. Bottom is smaller than I expected, but it is lightweight and functions perfectly.

Thank you for your review. Don't worry. Carbon steel will always discolor once it is brought to temperature. The varied coloration is normal for this material. The color will continue to change over time and use. This cookware is very similar to cast iron. The more you use it, the more it will season and release will improve. You are doing the right thing. Keep cooking and enjoy this pan as it fine tunes through use. Poor Quality, not long lasting
I received this pan in the beginning of December, and by the end of it, I could no longer use it. I would use it on medium, or just above medium heat, to sauté food, or toast bread. The last time I used it to cook French toast, it burned the egg mix on the bread, and it wasn't hotter than usual. Very disappointed. I'd recommend GreenPans instead, or Country Kitchen.
