Simple ingredients, big flavor

Melissa has outdone herself again with this book. She keeps techniques and ingredients simple, while amplifying flavor and texture and STILL minimizing dishes (one pot meals!) and the time it takes to get everything on the table. Most of these are “weeknight friendly” which is fantastic, and most of the ingredients she uses are already in my regular shopping. That said, she has inspired some variety in my meal rotation with things like the Thai omelette and sheet pan English breakfast. I’ll continue to cook from this book and sing its praises to friends and family.

Amazing Time Saving Meals for Busy People

I have to admit that I am a bit burnt out on cooking these days. A new business and overly scheduled kids have left little time to explore new foods and recipes like I love. I have been sticking to the basics and the family regulars. Keeping it quick, easy and not a lot of planning. So, Melissa Clark's new Dinner in One Exceptional & Easy One - Pan Meals could not have arrived at a better time. This is exactly the cookbook I didn't know I needed. With 100 recipes all made in one pot, pan or dish with minimal mess I looked at this cookbook and said to myself "This I can do!" The book is broken into nine chapters. They are: 1) Sheet Pans 2) Skillets 3) One Pot Pastas & Noodles 4) Dutch Ovens 5) Casseroles 6) Soup Pots 7) Instant pots & Multi- cookers 8) One Bowl Cakes and 9) No Pots,, Go -Withs and Basics. By request of the little people in the house I started with the Meatball Sub Sandwiches recipe on page 28. This could not have been easier to make. Prep time was about 20 minutes and the meal was on the table in no time. The take away here is making the sub roll a garlic bread! The garlic crunch explosion is amazing ! I used ground turkey instead of beef and to make it even easier I used a store bought marinara sauce. I have not had a meatball sub in over a decade and this was an excellent reminder how bad I missed one. Next up we made a Spicy Turkey Larb. When I was in Laos in 2009 I had an exceptional chicken larb and was excited to revisit this South East Asian deliciousness. The key to a great larb is fresh, fragrant herbs. I used Cilantro, Mint and Basil. Use Thai basil if you want to take it up a notch in authenticness. We served it with big pieces of romaine lettuce and also rice. Add extra wedges of lime for added punch. Lastly, the kids chimed in again and requested the Cheesy Baked Pasta. This is quick and easy and the best thing about it is its pretty much lasagna without having to make lasagna or having to eat the left overs for 2 weeks. A huge winner with the kids and super easy to clean up. This is just the tip of the easy cooking iceberg and we are excited to dip in more. We have tags of the following recipes - Crispy Kimichi Fried Rice, Cumin-y Chicken and Rice, Creamy Peanut Chicken with Charred Snow Peas and for dessert Brown Butter Cornmeal Yogurt Cake to name a few. Delicious and Easy One Pan Meals

Melissa Clark’s new “Dinner in One: Exceptional & Easy One-Pan Meals” provides tasty and easy to make meals that all can be done in one pan, dish or pot. For my family I’m always looking for quick and simple dinners and this cookbook nails it. Italian pasta dishes are always a hit in our house and we tried the Cheesy Baked Pasta with Tomato, Sausage and Ricotta and it definitely didn’t disappoint. Clark describes the dish as “between baked ziti and meaty lasagna” and that’s exactly how it comes out. The dish has everything I look for in a pasta dish with ricotta, mozzarella and sausage, I highly recommend this meal. With Fall beginning our family enjoys soups and we had to try the Orzo Minestrone with Fresh Corn, Zucchini and Pesto since it is hearty but not too heavy. We used fresh corn and that really makes the dish with the other veggies, beans and orzo. This will certainly be a soup we’ll be making again soon. Clark does a fantastic job with these 100 recipes and I’d recommend this to anyone looking for some new fresh dinners and more that can be made in one pot, pan or dish. Not Just The Best One Pot Cookbook...

You know when you open a cookbook and start browsing the recipes...well I bookmarked the first recipe, then the second, the third...until I was bookmarking every recipe! No cookbook has 'spoken' to me like this one, and I love all of Melissa Clark's cookbooks. I'm not a one pot kinda cook, I don't mind using as many pots or pans as I need to to get the job done, but the fact that the recipes are so delicious, so interesting, and also conveniently made in one pot or sheet try, makes this a winner winner! It's also genius because it recommends veggie/vegan alts for almost every recipe. I've already gifted the book to a vegetarian friend who can't get enough. Get food on the table quickly

For all of us, Melissa's fans, this book has been long awaited. And it's so worth it! Melissa delivered what she promises: easy, veg-centered, and very weeknight-friendly. I love that the book brings this collection of simple yet sophisticated in flavor recipes, just like the way the author cooks, the way I love to cook, and the way you probably love to cook; I'm guessing. Delicious & nutritious. Just get it; you won't regret it. The book also includes options for sheet pan recipes and one-bowl cakes, for example, which make it even more complete. The cookbook every busy cook needs

This cookbook came into my life just as school is back in session and the kid activities are in full swing. I appreciate how the cookbook is organized according to single cooking vessels: Sheet pans, skillets, one-pot pastas, Dutch ovens and casseroles. The recipes all feel streamlined and easy to put together on a weekday night. I have always been a fan of Melissa Clark’s cookbooks and own a few of her cookbooks-- the Dinner cookbook is another favorite. In true Melissa Clark style, the recipes in Dinner in One are unfussy but bold in flavor. She also includes recipe suggestions for ingredient swaps and vegetarian and vegan options as well. I have already made the Eggplant Feta Rice, the Roasted Salmon Salad and the cover stunner pasta: Creamy Goat Cheese Pasta with Burst Cherry Tomatoes and Olives. The eggplant rice was a comforting dish that felt almost “meaty” with the addition of eggplant and feta. I served it with a tomato cucumber salad and it worked well for a summer dinner. The Creamy Goat Cheese Pasta was pretty popular in my house due to the creaminess and savory-ness from the goat cheese and olives. I ate the leftovers as pasta salad the next day and it was still outstanding. I do have to say however that my favorite recipe so far has been the Roasted Salmon Salad. I have already made it twice, which is really saying something, as we have been experiencing a heat wave in Southern California. Thank goodness for toaster ovens! For me, this recipe alone is worth the price of the cookbook. I love salmon but I am not a fan of the mess you are left with after you pan fry it. This recipe requires that you oven roast the salmon with olive oil and lime halves. The fish ends up tender and flaky and ready to absorb the savory and sour dressing. This salad is perfect for a summer dinner, along with some steamed rice. I highly recommend it! I’ve received a free copy from Ten Speed Press in exchange for a free and unbiased review.

Streamlined Cooking Efficiency!

I am a devoted Melissa Clark recipe fan. If you're not familiar with her, get yourself to the New York Times cooking section or any of her other cookbooks! If you're a fan like me, you're going to enjoy this newest book. If you're a newbie, this may be the right starting point or, if, for example, instant pot/pressure cooking is more your speed, check out that book or French cooking or desserts -- lots of Melissa Clark options out there. She is a recipe writing pro and has really out done herself with this one in terms of efficiency. Recipes are streamlined for minimal dishes and minimal time. There is still prep work -- this is not an instant mac and cheese situation! But if you take the time to read the recipe in advance and grocery shop, I would call these weeknight meals. Clark's experience of translating restaurant and chef recipes and techniques, shows here. You're still talking the time to build flavors just without using multiple pots and pans or cooking techniques. My only quibble, maybe this is a 4.5 star review, is that some of the cooking times were off. Things browned faster than anticipated and some things took longer cooking times than given. In one recipe the header paragraph and photo show cherry tomatoes, but the recipe calls for canned tomatoes. Whoops! Small mistakes, but surprising for such an experienced author and team. I could list my favorite recipes so far, but I really thing there's something here for everyone. I recommend following her "veg it up" and "add it in" tips. They've never steered me wrong! My book is already stained with cooking splatters. The best sign that this one will be next to the stove a lot this year. Simplifying Dinner from What to Make and How

Melissa Clark's new book is a hit already! Our household loves the concept of one dish meals to make our lives all the easier during the week. It's laid out in sections of what you'll be cooking in (i.e. sheet pan, skillet, dutch oven, casseroles, soups, instant pots, one-bowl cakes). We've already bookmarked a ton of recipes and cooked a few including the cover photo (my picture here of it included!): creamy goat cheese pasta. This was probably our favorite so far! Other things we tried were the spiced pearl couscous (really easy) and orzo minestrone (perfect for end of summer!). I do think that some of the recipes get away with one pot, but depending on how much you buy from the store vs. make yourself, you'll be using multiple dishes. For instance, the minestrone calls for prepared pesto (rather than providing the recipe for it), and since I made mine, it was another set of dishes. The recipes also often call for cooked beans rather than figuring out how to still use one pot to first cook the beans as well (there are some that do call for dried beans however). We're looking forward to continuing to cook our way through this new staple on our bookshelf! I've received a free copy from Ten Speed Press in exchange for a free and unbiased review.
